Canlis ... one of the most perfect dining experiences I have ever had.  Not necessarily because of the food.  Don't get me wrong, it was very well executed using simple seasonal ingredients, but what really shone was the service.  Personable, timely and never missing a beat, these guys were spot on and running a well oiled machine.  The biggest thing I think I will actually take away from the experience was the way the kitchen felt.  In a small kitchen serving a full restaurant, I was surprise to see it was absolutely calm.  Every movement was deliberate, measured, controlled.  It was a beautiful thing to see.
